Ostrich Meat

Why Ostrich?

Its a healthier red meat! Ostrich meat is higher in iron and lower in fat and cholesterol than other red meats. They create less mud, methane gas, and drink less water than other animals, making it a more sustainable red meat. Best of all ostrich steak tastes and looks like beef fillet mignon!

Cooking Ostrich

Unlike other poultry, Ostrich is a red, lean meat and should be cooked and served rare to medium rare at most (120- 135 degrees). Because of the low fat content ostrich is very easy to overcook and will result in a gamey texture if overcooked. You can grill, pan sear, or sous vide it. You can marinade or or use a dry rub. We like to use salt, pepper and some garlic. Cook it how you would cook a nice cut of beef fillet mignon. Don't let it rest or it will continue to cook and become dry.

Fillets; in ascending order with Fan being the highest quality;

leg, oyster, round, outside, pearl, inside, tenderloin, and Fan.

Cook on high heat on each side to 125 degrees. Rich in flavor and low in fat.

Fan Fillet is The best of the best on the ostrich cuts, comparable to a beef fillet mignon!
